Baba Ghanoush

Ingredients

  • 3 large eggplants
  • 3-4 cloves of garlic
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 cup mayonnaise
  • Salt and papper to taste

Preparation

Step 1

Preheat oven to 375 degrees.

Pierce eggplants with fork. Place the eggplants in a baking dish and roast in oven on the midle rack. Broil for 30-40 minutes until the flesh becomes blackish in colour. Cool completely. Peel the eggplants and place the flesh in a food processor with all the above ingredients and process until the mixture is smooth.
