Just-Like-Lobster Casserole

This happens to be my dad's absolute favorite dish. My mom has made it for years. This casserole borders on true "comfort food," especially as we come off of a weekend filled with turkey leftovers. Living in the Boston area, seafood is always popular fare in our diet. This casserole leaves the fish fillets moist and succulent.

Ingredients
- 2 lbs haddock
- 1 can cream of shrimp soup
- 1/2 c chopped onion
- 1/2 c. chopped celery
- 1/2 tsp. garlic salt or seasoned salt (opt.)
- Dash pepper
- 1/4 c. melted butter
- 30 Ritz crackers, crushed
Preparation
Step 1
Put one layer of fish into buttered 13"x9" casserole or baking pan. Mix soup with onion, celery, garlic salt and pepper. Add some of the shrimp soup, then the rest of the fish. Add remaining soup. Bake 20 minutes, uncovered at 375 degrees. Mix butter with crackers and sprinkle over fish; bake another 10 minutes. Delicious with noodles or rice. Serves 4 to 6.
