Southwest Crunch Chicken Salad

Ingredients

  • 1 1/3 C fat-free Mayo.
  • 1/2 C minced fresh cilantro
  • 1/4 C lime juice
  • 2 garlic cloves, minced
  • 1 3/4 tsp. ground cumin
  • 3/4 tsp. grated orange peel
  • 1/2 tsp. salt
  • 9 cups cubed cooked chick. brst.
  • 1 3/4 cups jicama
  • 1 3/4 chopped celery
  • 1 3/4 cups chopped sweet red peppers
  • 1 C chopped cashews
  • 1/2 lb. turkey bacon strips, diced/cooked

Preparation

Step 1

In a small bowl, combine the first 8 ingredients. In a large bowl, combine the remaining ingredients. Add mayo mixture; toss to coat. Chill until serving.
