Oriental Grilled Chicken Salad

Ingredients

  • DRESSING:
  • 4 grilled chicken breast fillets
  • 1 romaine lettuce heart, chopped
  • 1 1/2 c coleslaw mix or finely chopped cabbage
  • 1/3 c toasted almond slivers or slices (blanched almonds)
  • 1/2 c chow mein noodles
  • 1/2 c vinegar
  • 1/2 c sugar
  • 3/4 tsp salt
  • 1 tsp dry mustard
  • 1 tsp horseradish
  • 1/4 c Spanish onion, diced
  • 1 c canola oil

Preparation

Step 1

Cook chicken fillets and cut into strips. Layer with lettuce, cabbage, almonds and then chow mein noodles.

DRESSING: Combine everything, except for oil, in a blender or food processor until liquefied. Continue to blend and slowly drizzle in the oil until blended. It makes enough for 3 or 4 salads.
