Fruit Salad with Lemon Poppyseed dressing

Ingredients

  • 1/2 c white sugar
  • 1/2 c lemon juice
  • 2 t diced onion
  • 1 t dijon-style mustard
  • 1/2 t salt
  • 2/3 c veg oil
  • 1 T poppy seeds
  • 1 head romaine lettuce, torn into pieces
  • 4 oz shredded swiss cheese
  • 1 c cashews, chopped
  • 1/4 c dried cranberried
  • 1 apple, peeled, diced and cored
  • 1 pear, peeled, diced and cored

Step 1

In a blender combine sugar, lemon juice, onion, mustard and salt. Process til well blended with machine still running add oil in a slow steady stream until mixture is thick and smooth. Add poppy seeds and process just a few seconds more to mix.

In a large serving bowl combine the romaine lettuce, cheese, cashews, cranberries, apple and pear. Toss to mix then pour dressing over salad just before serving and toss to coat.
