High-Protein Blender Pancakes

An easy pancake recipe using whole wheat kernels and dry beans.

Ingredients

  • 3 cups milk
  • 2 eggs
  • 2 t vanilla
  • 1/4 cup olive oil
  • 7 dates (or 1/4 cup sugar)
  • 1 3/4 cups whole wheat kernels
  • 1/2 cups dry pinto beans
  • 1/2 cup oatmeal
  • 1 t salt
  • 1 t baking soda
  • 1 T + 1 t baking powder

Preparation

Step 1

1. Blend all ingredients in a high-power blender.

2. Pour batter onto a hot griddle and cook on both sides until browned.
