Bacon-Jalapeno Taquitos

Ingredients

  • 8 slices bacon (diced)
  • 8 oz cream cheese (softened)
  • 1 jalapeno (seeded and minced)
  • 1 cup shredded Monterey Jack
  • 5 green onions (sliced)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • salt and pepper to taste
  • 8 6-inch flour tortillas

Preparation

Step 1

In a large skillet, cook bacon over medium-high heat until crisp; transfer to a paper towel. Keep drippings. In a large mixing bowl, blend cream cheese, jalapeno, Jack cheese, onions, cumin, coriander, salt, pepper, and bacon on medium speed.

Divide the mixture evenly among the 8 tortillas. Spread the filling all the way to the edge of the tortillas. Roll up tortillas and fry them in bacon grease, seam side down, in batches, until browned (about 3-5 minutes on each side).
