Ingredients
- Wet ingredients:
- 1/4 cup butter or margarine, melted
- 1 cup milk
- 1 large egg
- 1/2 teaspoon grated lemon peel
- ...............................
- Dry ingredients:
- 2 cups flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon poppy seeds
- ...............................
- Glaze:
- 2 tablespoons sugar
- 1 tablespoon lemon juice (brush on after baking)
Preparation
Step 1
Preheat oven to 400 degrees. Grease 12 muffin pan cups.
Whisk together wet ingredients in a medium bowl.
Combine dry ingredients in a large bowl.
Stir wet ingredients into dry ingredients just until combined.
Spoon batter evenly into prepared muffin cups, filling each about 3/4 full.
Bake at 400 degrees for 20 to 22 minutes, until toothpick inserted comes out clean.
Combine topping ingredients and sprinkle over muffins.
Cool in pans on wire rack for 5 minutes. Remove from pans and serve warm, or cool completely, wrap well and freeze up to 1 month. To reheat, loosely wrap each muffin in a paper towel and microwave on high 15 to 20 seconds.
