Cherry-Almond Macaroons (Paula Deen)

Ingredients

  • 4 egg whites, at room temperature
  • 2/3 cup sugar
  • 4 cups sweetened flaked coconut
  • 3/4 cup chopped dried cherries
  • 1/2 cup sliced almonds
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon vanilla extract

Preparation

Step 1

Preheat oven to 325 degrees. Line baking sheets with parchment paper

Beat egg whites at high speed with an electric mixer until foamy. Add sugar, 1 tablespoon at a time, beating until stiff peaks form. Fold in coconut, cherries, almonds, flour, and vanilla.

Drop mixture by rounded tablespoonfuls onto prepared baking sheets. Bake for 12 to 15 minutes, or until edges begin to brown. Let cool on pans for 2 minutes. Remove from pans, and cool completely on wire racks.
