Roasted Veggies

Ingredients

  • zucchini cut into bite sized pieces
  • squash cut into pieces
  • red pepper cut into pieces
  • yellow pepper cut into pieces
  • red onion cut into pieces
  • olive oil
  • salt
  • pepper

Preparation

Step 1

heat oven to 450 degrees. put all veggies in a large pan and toss with oil, salt and pepper. spread in a single layer in pan. roast for 30 minutes and stir occasionally.
