Ingredients

  • Crust:
  • 1 box of Pillsbury Pie Crusts (2 rolls; found in refrigerated aisle)
  • Filling:
  • 1 cup sugar
  • 1/2 cup flour
  • 4 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 6 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon stick butter
  • Egg wash:
  • 1 egg
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon

Step 1

INSTRUCTIONS:
1. Preheat oven to 425°F
2. Follow instructions on Pie Crust Box and roll out one crust into 9” pie plate
3. Use a fork to put holes in the crust
4. In a large mixing bowl combine 1 cup sugar, ½ cup flour, 4 tablespoons cornstarch and ½ teaspoon ground cinnamon
5. Rinse 6 cups of fresh blueberries
6. With the damp blueberries mix them into the sugar/ flour/ cinnamon mixture
7. Spoon the blueberries into the pie plate
8. Take the remaining sugar/ flour/cinnamon mixture in the bowl, sprinkle it evenly over the blueberries in the pie plate
9. Sprinkle the lemon juice on the blueberry mixture
10. Cut 1 tablespoon of the butter into small piece
11. Place the small pieces of butter on top of the blueberry mixture
12. Take the second pie crust and place it on top of the blueberry mixture
13. Cut slits in the second pie crust and seal to the first pie crust
14. Whisk ingredients for egg wash in a small bowl and baste over the top crust
15. Place on foil lined cookie sheet (easy clean up if pie bubbles over)
16. Bake 35 to 45 minutes or until golden brown and begins to bubble through slits in crust
