Skillet Fish Supper

Ingredients

  • 2 tablespoons butter or olive oil
  • 1 cup chopped onion
  • 1 1/2 cup diced peeled potatoes
  • 1 cup corn
  • 1 pound fish fillets (cod, bass, snapper or halibut), cut into 1 inch chunks
  • salt and black pepper to taste
  • 1/3 cup chopped fresh parsley

Preparation

Step 1

Heat butter/olive oil in a large skillet over medium-high heat, then add the onion and potatoes and cook slowly until the potatoes are tender. Stir in the corn kernels. Add the fish chunks and salt and pepper to taste, and continue cooking, stirring occasionally, unitl the fish is cooked through, about 5 minutes. Be careful not to break up the fish while stirring. Sprinkle with parsley and serve.
