Ingredients
- 2 pounds tri-tip steak, cut into bite sized pieces
- 3 large carrots, cut into bite sized chunks
- 6 celery stalks, cut into bite sized chunks
- 8-10 baby red potatoes, cut into bite sized chunks
- 2 bags pearl onions
- 1/2 head garlic, peeled and smashed
- kosher salt and freshly ground black pepper
- 2 cans Guinness beer
- 32 ounces vegetable broth
- 1 tablespoon oregano
- 1 tablespoon Tabasco
- 1 can tomato paste
- red pepper flakes (dried)
Preparation
Step 1
Season steak with salt and pepper and sear with a bit of extra-virgin olive oil
Add garlic
Add 2 cans of Guinness
Add vegetable broth
Thin tomato paste with hot water and add to the broth and beer.
Add salt, pepper, Tabasco, oregano, and red pepper flakes.
Set slow-cooker to six hours on low and allow to cook.
THREE HOURS INTO COOKING...
Add celery and carrots. Stir.
FOUR HOURS INTO COOKING...
Add pearl onions. Stir.
FIVE HOURS INTO COOKING...
Add potatoes. Stir
