Cedar Planked Lemon Pepper Salmon with Horseradish-Chive Sauce

Ingredients
- Sauce:
- 2 cedar planks
- 1 tbsp grated lemon zest
- 1 1/2 tsp chopped fresh thyme
- 1/2 tsp granulated sugar
- Kosher salt and freshly ground black pepper
- 2 boneless salmon fillets
- 2 tbsp EVOO
- 1/2 c sour cream
- 3 tbsp minced fresh chives
- 1 1/2 tbsp prepared horseradish
- Kosher salt and freshly ground black pepper

Preparation
Step 1
Soak cedar planks for at least one hour and drain.
In a small bowl combine the lemon zest, thyme, sugar, salt and pepper. Rub the mixture together until zest is dissolved. Rub salmon fillets on both sides with olive oil then sprinkle with lemon-pepper mixture. Gently rub seasoning into the fillets. Let stand at room temperature while the grill heats.
Grill the salmon on the cedar planks until medium.
Combine all sauce ingredients and refrigerate until needed.
