Cheesy Stuffed Meatloaf

This meatloaf is cooked on a cookie sheet which gives it a nicer crust than the breadpan version. Also when you slice it you get a lava of hot cheese out of the middle.

Ingredients
- 2 1/2 lbs Sweet Italian Sausage
- 1 1/2 lb Lean Ground Beef
- 1/4 c Ketchup
- 1/2 c Seasoned Bread Crumbs (Italian flavor Progresso)
- 2 T Chopped Dried Onion
- 1 T Onion Powder
- 1 T Garlic Powder
- 1 t Salt
- Pepper (fresh ground)
- 1/2 c Parmesan (good quality)
- 1 1/2 c Grated Cheddar Cheese (medium to sharp)
Preparation
Step 1
Preheat oven to 350. Mix together all ingredients except cheddar cheese. Press out mix onto a silpat in a large rectangle about ¾ inch thick. Place grated cheese in the center, keeping a border clear of the cheese all the way around. Using the silpat to help, roll up meatloaf into a roll, sealing the ends and seam. Place seam side down on silpat on a cookie sheet and bake in the oven until crusty brown on the outside. Approximately 1 hr. Slice to serve
