Cottage cheese cookies

Do not preheat oven, chill the dough overnight

Ingredients

  • 2 cups of butter, softened or at room temperature
  • 1 1/2 cups of packed brown sugar
  • 2 cups of white sugar
  • 4 eggs
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 teaspoons vanilla extract(1 tablespoon +1 teaspoon)
  • 2 cups small curd cottage cheese (1 pound)
  • 1 cup nuts, pecans, or use nuts of your choice. Chopped
  • 1 cup Hershey's cocoa powder
  • 5 1/2 cups of flour, do not sift, level
  • 1 cup confectioners' sugar

Preparation

Step 1

Use an electric mixer, this is a heavy dough. Mix Brown sugar, white sugar ,and butter, add eggs, one egg at a time, mixing each well. Add baking soda, baking powder, salt, and rest of ingredients. Mix well. Add vanilla extract, stirring cottage cheese, keep mixing well, add pecans or nuts of your choice. You can also use raisins, add Cocoa powder one quarter of the cup at a time mix well after each addition, add flour 1/2 cup at a time, mix well do a final stir. Cover with Saran wrap, and refrigerate overnight. Preheat oven 350°, spray the pans with Pam, or use parchment paper, roll the dough into 1 inch small pieces, place and powdered sugar, if you don't have powdered sugar and can use regular sugar. Flatten bake 350° oven for 10 min., leave 2 min. to cool, remove. Yields 12 dozen cookies.
