Crunchy Cream Pie*****

Kevin had a piece of this pie in 2009 when he had a opportunity to play Firestone. He raved about it, I was thrilled to find the recipe. This recipe makes 3 pies, I cut the recipe back to make 1, it was fantastic. Note to self...this is too good to ever make just one, we killed it!

Ingredients

  • Ingredients: (PIE)
  • 2 Qt. Whole Milk
  • 1 lbs. Sugar
  • 2 oz. Butter- cubed
  • 5 eggs
  • 4 oz. Cornstarch
  • 1 oz. Vanilla
  • Ingredients: (TOPPING)
  • 16 oz. Whipped Cream
  • 2 1/2 lbs. coconut
  • 1 1/2 cups sugar
  • 1 lbs. Walnuts
  • 2 tsp. Cinnamon
  • 3 pie crusts- Baked
  • extra pieces of baked pie crust for topping
  • This was entirely too much topping,the amounts as printed would be enough for 6 pies.

Preparation

Step 1

Directions for pie

1. Mix together ½ pound of sugar, 4 ounces cornstarch (mix well)
2. Add 5 eggs and 1 ounce of vanilla and mix
3. Put the milk in a pot. Mix in ½ pounds of sugar and bring to a simmer.
4. Add the egg mixture to the simmering milk and whip constantly until it starts to bubble and you get the true thickness.
5. Remove from the heat and blend in the cubed butter.
6. Pour directly into pie shells.
7. Chill pies before adding toppings

Directions for topping

1. Top pie with whip cream and portions of cooked pie dough chopped
2. Bake off walnut pieces to a light brown
3. Toast Coconut
4. Mix all ingredients with sugar and cinnamon to your taste
5. Spread over pie
