Ingredients
- 1.5 cups unsweetened shredded coconut
- 1/2 cup Coconut butter
- 1/2 cup Coconut Oil
- 1 teaspoon vanilla extract
- pinch of salt
- 1 Tb lakanto sweetener
- 1 Tb Coconut sugar
- 10 oz dark chocolate chips
Preparation
Step 1
Place shredded coconut, coconut cream concentrate, coconut oil, vanilla, salt and both sweeteners into a food processor and blend until you get a slightly chunky texture.
Place liners in small muffin tin.
Spoon about 1 Tb of mixture into your muffin tins.
Press 4-5 large choc chips into each of the bites.
These keep great in the freezer...but let them thaw a bit before eating.
