Creamy Pina Colada

Ingredients

  • 1 pint (2 cups) lemon sherbet
  • 1 pint (2 cups) pineapple sherbet
  • 1 (10-oz.) can frozen pina colada concentrate
  • 1/2 to 3/4 cup light rum
  • 1/2 cup whipped cream, if desired
  • Dash cinnamon, if desired
  • 8 fresh pineapple pieces and small leaves, if desired

In blender container, or food processor bowl with metal blade, or mixing bowl, combine sherbets and pina colada concentrate; blend until smooth. Stir in rum. Place in airtight container; freeze 1 to 2 hours or until slushy.

To serve, stir mixture. Pour or scoop into 8 stemmed glasses. Top with whipped cream; sprinkle with cinnamon. Garnish each glass with a pineapple piece and leaves.
