Ingredients
- 3 oz day old crusty italan or french bread cut in bite size pieces
- cooking spray
- 1 12 oz pkg roasted garlic ck sausage
- 3 c ripe tomatoes seeded and chopped
- 1/4 c finely chopped scallions
- 3/4 c light red wine vinegarrette
- 6 T shredded parm
- 1/3 c chopped fresh basil
- 6 C chopped romaine
- 1 c chopped cukes

Preparation
Step 1
spread bread on baking sheet-allow to dry well preparing salad
fry sausage in pam till well browned then cut in bite size pieces
in large bowl stir tomatoes cukes scallions and vinegrette together
add bread and sausage and toss to coat
add parm and basil and toss
arrange 1 c romaine on each plate and top with sausage mixture
garnish with extra basil and black olives if desired or pitted kalmatta olives
