Oatmeal Chocolate chip muffins

Ingredients

  • Wet ingredients
  • 1/4 cup butter or margarine melted
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup old fashion oats
  • Dry ingredients
  • 1 and 1/3 cups of flour
  • 1/3 sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Additions
  • 1/2 cup miniature chocolate chips

Preparation

Step 1

1. Preheat oven to 400 degrees.
2. Grease 12 muffin-pan cups.
3. Whisk together wet ingredients in medium bowl.
4. Combine dry ingredients in a large bowl.
5. Stir wet ingredients into dry ingredients just until combined.
6. Fold in the addition.
7. Spoon batter evenly into prepared muffin cups, filling each about 3/4 full.
8. Bake 20 to 22 minutes until toothpick inserted comes out clean.
9. Cool in pans on wire rack for 5 minutes. Remove from pans and serve warm, or cool completely,wrap and freeze up to 1 month. To reheat, loosely wrap each muffin in a paper towel and microwave on high 15 to 20 seconds.
