Ingredients

  • 1/4 cup water
  • 3/4 cup sugar
  • 1 cup light corn syrup
  • 4 cups sweetened shredded coconut
  • 1/2 cup marshmallow creme
  • 1 tsp vanilla extract
  • 1 1/2 cups chocolate for dipping

Step 1

1/4 cup water
3/4 cup sugar
1 cup light corn syrup
4 cups sweetened shredded coconut
1/2 cup marshmallow fluff
1 tsp vanilla extract
1 1/2 cups melted chocolate for dipping (add 1 Tbsp shortening to chips and microwave at 15 second intervals)

grease an 8 inch square pan line with plastic wrap (for easy removal) and grease.

In a 2-quart pot, combine water, sugar and corn syrup, lid on. Bring to a boil for 3 minutes. Remove the lid and use a candy thermometer continue to cook, but don't stir, until you reach 245.

In a medium bowl, add coconut, sugar, syrup, marshmallow creme and vanilla. Stir until just combined. Pour into the prepared pan. Grease your hands and spread evenly.

cool and let set for at least 1 hour. Remove from pan and cut into 1x1 inch squares. Dip each square in chocolate and sprinkle with coconut.
