Egg Baked in Avocado

  • 2 eggs
  • 1 avocado
  • Toppings of your choice (optional)

Original Recipe:

Preheat oven to 425 and place cast iron pan in the oven.

Slice avocado in half and remove pit.

Take the pan out of the oven, put avocado halves in pan, crack an egg in each half. Top with anything you like, bacon, cheese, green onions, salsa -- use your imagination.

Return the pan to oven and cook until your eggs are done how you like them.

Other helpful information left out of the original recipe:

This is such an amazingly delicious recipe, however the first time i made it it turned out NOTHING like the photo. They leave out critical information that could aid you toward a better result.

An avacado halve will most like not be able to stand up well since it is rounded. I suggest cutting off a bit from the bottom creating a flat surface to stabalize the avacado.

Also an egg is way larger than the size of the removed pit. You will need to scoop out a bit of the avacado to make room for the entire egg.

Since the avacado gets very hot it will continue to cook the egg so check the consistency of the egg and remove it a bit earlier than you would think. I prefer a nice runny yolk and this is the most difficult to achieve.

Also think about the toppings. If you put cheese on top it will most likely get overcooked well before the egg is cooked so put the cheese in the avacado and the egg on top. things like green onion or other chopped veggies can of course go on top.
