Tomato Butter

Ingredients

  • cherry tomatoes
  • kosher salt
  • 2 sticks unsalted butter, softened

Preparation

Step 1

Broil the cherry tomatoes until the skins blister and the juices are released; let cool.

Place the cooled tomatoes in a food processor with 2 teaspoons of kosher salt. Process until coarsely pureed.

Mix into the softened butter. Dollop onto grilled fish, cooked rice or crostini.
