Homemade Marshmellows

Ingredients

  • 5 Tbs.knox unflavored gelatin
  • 2 c cold water
  • 3 c sugar
  • 2 c light corn syrup
  • 1/2 tsp. salt

Preparation

Step 1

Stir in bowl of mixer knox gelatin and water. Let sit 30 min. to gel. Dust 9x13 pan with thick layer of powdered sugar. In a heavy pot bring to boil 1 c water, 3 c sugar, 2 c light corn syrup, and salt. Wisk until smooth. Stirring constantly, boil to firm ball stage or 245 degrees. Slowly pour mixture into mixing bowl with gelatin. Mix on medium high for 20 minutes. Add vanilla and beat 5 more minutes. Pour into prepared 9x13 pan and cool. to turn out of pan, run a sharp, smooth knife dipped in hot water around the edge until loose. Turn onto counter sprinkled with powdered sugar. With sharp knife cut inot squares. Put in freezer for several minutes to harden before dipping.
