Bourbon Pecan Tassies

Ingredients

  • Dough:
  • 1 cup flour
  • 1/4 cup cornmeal
  • 1/2 cup butter, softened
  • 3 ounces cream cheese, softened
  • Filling:
  • 1/2 cup packed light brown sugar
  • 1/4 cup dark corn syrup
  • 2 tablespoons bourbon
  • 1 tablespoon butter, melted
  • 2/3 cup toasted pecans
  • pinch of salt

Preparation

Step 1

Preheat the oven to 350 degrees.

1. Combine the flour and cornmeal on waxed paper.
2. Beat the butter and cream cheese until combined, then add the flour/cornmeal mixture.
3. Divide the dough into 24 pieces, then press each piece into the bottom and up the sides of mini muffin pans.
4. Put 1 tablespoon of filling into each muffin cup.
5. Bake for 20 to 25 minutes until the filling is set and pastry is lightly browned.
6. With the tip of a knife, remove the tassies from the muffin pan and cool completely.
