Kelp Noodles - Curry

Ingredients

  • Sauce:
  • 1/2 package kelp noodles – cut into 3 inch pieces, soak 1 hour with 1/4 lemon wedge
  • Grate: 2 carrots, 1 zucchini, 1 inch ginger
  • Slice very thinly: 1 celery stalk, 1/2 sweet onion
  • Greens: 4 kale leaves pulled off stem, 2 large handfuls of spinach
  • 1/3 cup lemon juice
  • 3/4 cup coconut milk – 1/2 can
  • 1 tablespoon curry powder
  • 1/4 cup sesame seeds
  • 1/2 teaspoon himalayan sea salt
  • 1/2 teaspoon white pepper
  • pinch cayenne pepper

Preparation

Step 1

Add all sauce ingredients into Vitamix and blend on high a few seconds.
Add sauce to veggies and kelp noodles and heat a minute. Serve with sesame seeds or hemp seeds on top.
