Kelp Noodles - Curry

Ingredients
- Sauce:
- 1/2 package kelp noodles – cut into 3 inch pieces, soak 1 hour with 1/4 lemon wedge
- Grate: 2 carrots, 1 zucchini, 1 inch ginger
- Slice very thinly: 1 celery stalk, 1/2 sweet onion
- Greens: 4 kale leaves pulled off stem, 2 large handfuls of spinach
- 1/3 cup lemon juice
- 3/4 cup coconut milk – 1/2 can
- 1 tablespoon curry powder
- 1/4 cup sesame seeds
- 1/2 teaspoon himalayan sea salt
- 1/2 teaspoon white pepper
- pinch cayenne pepper

Preparation
Step 1
Add all sauce ingredients into Vitamix and blend on high a few seconds.
Add sauce to veggies and kelp noodles and heat a minute. Serve with sesame seeds or hemp seeds on top.
