Lemony Asparagus with Pine Nuts & Parmesan

Ingredients

  • 2 T. pine nuts
  • 2 T. evoo
  • 2 pounds asparagus, trimmed cut into 2" pieces
  • kosher salt and black pepper
  • 1 t. thinly slices lemon zest
  • 1 oz. parmesan, shaved

Preparation

Step 1

1. Oven to 350.

2. Place pine nuts on rimmed cookie sheet and heat, tossing, til golden--about 6-8 minutes

3. Heat oil in large skillet over medium heat. Add asparagus and 1/4 t. each of S and P. Cook tossing occasionally 4-6 minutes til tender.

4. Add pine nuts and toss to combine. Sprinkle with lemon zest and Parmesan.
