Baked Italian Shrimp

Ingredients

  • 2/3 C fine, dry breadcrumbs - Panko
  • 1/2 C grated Parmesan cheese
  • 1/4 C chopped fresh parsely
  • 2 LBS unpeeled, large fresh shrimp
  • 2 tsp minced fresh garlic
  • 1/2 tsp seasoned salt
  • 1/2 tsp freshly ground pepper
  • 1/4 C olive oil
  • Can serve with Vinho Verde wine - Portuguese wine.

Preparation

Step 1

Combine breadcrumbs, cheese and parsley in a shallow dish and set aside.

Peel shrimp, leaving the tails intact, and devein.

Place in a large boil, sprinkle shrimp with garlic, seasoning salt and pepper. Drizzle with olive oil and toss gently.

Dredge shrimp in breadcrumbs mixture.

Arrange shrimp in an even layer on greased jellyroll pan

Bake @ 400 degrees for 15 to 20 minutes, stirring 2 times

Can put under broiler for last 1-2 minutes to crisp up, if needed
