Ingredients
- 6 tsp. olive oil
- 2 large onions, chopped
- 4 cloves Garlic, minced
- 2 jalapenos, finely chopped
- 6 medium zucchini, cut in 1/2" cubes
- 2 cups frozen sweet corn
- 2 14-oz cans of diced tomatoes, drained
- 1 cup of Half and Half
- Salt and Ground Black Pepper to taste
- 6 oz Pepper Jack Cheese, 3/4 cup shredded
Preparation
Step 1
Heat oil in Dutch oven over medium heat. Add onion and cook two minutes. Stir in garlic, jalapeno and zucchini. Cook, stirring occasionally, until zucchini is just al dente, about 5 minutes. Stir in corn, tomatoes and half and half. Reduce heat to low and simmer, covered until corn and zucchini are tender. Remove from heat and season to taste with salt and pepper. Sprinkle cheese over top and let melt. Serve immediately.
