Ingredients

  • 12 (about 16 oz) baby Dutch yellow potatoes, whole, unpeeled
  • 2 Tbsp. Wegmans Basting Oil, divided
  • salt and pepper, to taste
  • 2 pkgs (8 oz each) red baby beets, 1-inch dice (3 cups), discard juice

Preparation

Step 1

1. Preheat oven to 450 degrees F.

2. Toss potatoes in large bowl with 1 Tbsp basting oil; season to taste with salt and pepper.

3. Arrange in single layer on baking sheet.

4. Roast on center rack of oven 10 minutes, or until lightly browned.

5. Toss beets with remaining basting oil; season to taste with salt and pepper.

6. Add beets to baking sheet. Roast 10 minutes until lightly browned and potatoes are fork-tender.
