Ingredients
- 1 c mayonnaise
- 1/2 c olive oil
- 2 tsp lime zest
- 1/3 c fresh lime juice
- 1/4 c minced fresh cilantro
- 4 cloves garlic, minced
- 2 tsp salt
- 2 tsp hot sauce
- 6 boneless skinless chicken breasts (about 3 lbs)
- 1 onion, thinly sliced
Preparation
Step 1
In a resealable plastic bag, combine mayo, olive oil, lime zest, lime juice, cilantro, garlic, salt and hot sauce. Add chicken and onions. Seal bag and turn to coat. Refrigerate for at least 4 hours or up to 24 hours.
Spray a grill rack with nonstick nonflammable cooking spray. Preheat grill to medium heat (300-350). Remove chicken from marinade, discarding marinade.
Grill chicken, covered with grill lid for 8 to 10 minutes per side or until a thermometer inserted in thickest portion registers 165 degrees.
