Cucumbers with Sour Cream and Dill

Ingredients
- 5 cups thinly sliced English cucumbers (about 2 cucumbers)
- 1/2 tsp. salt
- 1/2 cup reduced-fat sour cream
- 2 Tbl. white vinegar
- 2 Tbl. sugar
- 1/4 cup diced red onion
- 1 to 2 Tbl. minced fresh dill
- 1/8 tsp. black pepper

Step 1
Peel the cucumbers if you prefer. Place the cucumber slices in a colander, sprinkle with salt and toss to coat. Let stand in the refrigerator for 1 to 2 hours, allowing cucumbers to release some moisture. Pat cucumbers dry with paper towel. In a large bowl, combine the sour cream, vinegar and sugar. Add sliced cucumbers to the sour cream dressing along with the onion, dill and black pepper. Stir gently to coat. Chill 1 hour before serving to allow flavors to blend.
