Ingredients

  • 1 lb. sweet Italian sausage - casings removed
  • 1 onion - chopped
  • 1 cup minced celery
  • 1 cup minced carrot
  • 3 cans (14 oz. each) beef stock
  • 2 cans(15.5 oz each)dice tomatoes with basil, oregano & garlic
  • 1 can (16 oz.) red kidney beans - drained
  • 1 can (16 oz.) light red kidney beans - drained
  • 1 can (15.5 oz.) great northern beans - drained
  • 2 cups ditalini pasta
  • 1 teaspoon salt
  • 1 teaspoon pepper

Preparation

Step 1

In a large dutch oven, cook sausage, onion, celery & carrot over medium-high heat until sausage is browned & crumbles. Drain well.

Stir in broth, tomatoes & beans; bring to a boil over medium-high heat, & simmer for 20 minutes. Add pasta, simmer for 8 - 10 minutes, or until pasta is tender. Stir in salt & pepper. Serve immediately.
