Ingredients
- 2/3 C BOILING WATER
- 1 4OZ PINEAPPLE JELLO
- 4 OZ CREAM CHEESE, SOFTENED
- 1 8OZ CAN CRUSHED PINEAPPLE, UNDRAINED
- 2 T COCONUT FLAVORED RUM (OR COLD WATER)
- 2 C THAWED COOL WHIP, DIVIDED
- 1/4 C COCONUT, DIVIDED
- 1/4 C SLICED ALMONDS, DIVIDED
- 1 GRAHAM CRACKER CRUST
Preparation
Step 1
STIR BOILING WATER INTO DRY JELLO 2 MINUTES OR UNTIL DISOLVED. BEAT CREAM CHEESE IN LARGE BOWL UNTIL CREAMY. GRADUALLY ADD JELLO, MIXING AFTER EACH ADDITION. STIR IN PINEAPPLE, RUM AND 1 C COOL WHIP.
SPRINKLE 2 T EACH OF COCONUT AND ALMONDS ONTO BOTTON OF CRUST, COVER WITH WHIPPED TOPPING MIXTURE. REFRIGERATE 3 HOURS.
TOP WITH DOLLOPS OF REMAINING COOL WHIP, COCONUT AND ALMONDS JUST BEFORE SERVING.
