Thai Duck Salad

Ingredients

  • 2 tbsp. lime juice
  • 1 tbsp. fish sauce
  • peanuts, 1/4 cup
  • 1 red onion, sliced
  • cilantro, chopped
  • scallions, chopped
  • mint leaves
  • cucumber sticks
  • pineapple chunks
  • rice noodles
  • Chinese barbeque duck, sliced
  • salad greens such as Boston lettuce

Preparation

Step 1

- Cook duck and slice into thin slices.

- Boil noodles for about 30 seconds and drain. Add cold water to noodles so they will not stick together and drain again. Set aside.

- Mix lime juice, fish sauce, cilantro, scallions, cucumber, pineapple, red onion together.

- Add duck and rice noodles to the greens. Drizzle marinade over the greens. Sprinkle with peanuts. Toss.
