Strawberry Jalapeno Jam

  • 6 cups washed, hulled, crushed strawberries
  • 6 cups sugar
  • 1/3 cup diced jalapenos, seeded for a milder jam or with seeds for extra spice
  • 1/4 cup lemon juice

Preparation

Step 1

Combine berries, sugar, jalapenos and lemon juice in a large saucepan. Bring to a rapid boil, stirring to help sugar dissolve and prevent burning. When boiling, reduce to a simmering boil and cook, stirring frequently. Cook until thick, about 20-30 minutes.

Use a cold spoon to test if done. Place spoon in pot and coat with boiling mixture. If it gels, the jam is ready.

When mixture reaches jam stage, remove from heat. Ladle hot jam, into clean jars, leaving 1/4" head space. Wipe the tops of the jars clean and seal. Process in a hot water bath for 10 minutes.

Makes about 4 pints
