Apple German Pancake (Paleo/GF/SF)

Ingredients

  • Pancake batter:
  • 1 cup coconut milk (or 1 c hemp milk + 1 tbsp coconut oil, melted)
  • 6 eggs
  • Liquid vanilla stevia + 2 tsp maple syrup to desired sweetness
  • 2 tsp vanilla extract
  • 1/8 tsp salt
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 c coconut flour
  • 1/2 tsp baking soda
  • 2 tbsp cornstarch or tapioca flour
  • Apple mixture:
  • 1 tbsp coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp honey
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 2 apples, chopped
  • Spritz of lemon juice and zest
  • Dash of salt
  • Topping:
  • Walnuts

Preparation

Step 1

Preheat oven and cast iron pan to 500 degrees x15 minutes

In a blender/VitaMix, add coconut milk, eggs, stevia, maple syrup, vanilla, salt, cinnamon, nutmeg. Blend.
Add: coconut flour, baking soda, cornstarch. Blend and set aside.

In a saute pan, melt coconut oil then add the rest of apple mixture ingredients
Simmer x2-3 minutes

Pull cast iron pan out of the oven and add 1 tbsp coconut oil
Add apple mixture then add batter
Bake x8-10 minutes
Sprinkle with walnuts and serve!
