Grilled Goat Cheese Pizza with Figs, Beets and Wilted Greens

Ingredients

  • 4 medium beets, peeled and sliced 1/4" thick, greens washed, stemmed and thinly sliced
  • 4 tsp EVOO
  • Kosher salt and freshly ground pepper
  • 1 lb pizza dough
  • All purpose flour, as needed
  • Cornmeal, as needed
  • 4 oz. goat cheese
  • 1/2 c chopped, dried figs
  • 4 thin slices provolone

Preparation

Step 1

Heat a gas grill on high.

In a medium bowl, toss the beets with 2 tsp. of the oil and light sprinkling of salt and pepper. In another medium bowl, toss the beet greens with remaining 2 tsp oil and salt and pepper.

Turn dough out on a surface sprinkled with flour and cornmeal. Roll out dough into 4 pies.

Grill the beets, covered, turning once, until tender and softened, 8-10 mins. Return the beets to their bowl and set aside.

Reduce the grill heat to medium low. Arrange the pizza dough on the grill. Cover and grill, moving them around as needed to ensure even cooking, until browned. Spread each with goat cheese and top with beet greens, grilled beets, figs and provolone cheese. Return to the grill and cook until cheese is melted.
