Cheesy Polenta

Ingredients

  • 3 1/2 cups water
  • 1 cup dry polenta or cornmeal
  • 1 tsp. kosher salt
  • 1 cup grated Monterey Jack cheese

Preparation

Step 1

Boil water in a saucepan over medium high heat; gradually whisk in polenta. Add salt to water, reduce heat to low, and cook 5 minutes, stirring often. Fold cheese into polenta. Remove from heat; cover polenta to keep it warm. Serve with Jalapeño Beef.
