Aunt Lynn's Pasta with Peas and Mushrooms

Ingredients

  • Extra Virgin Olive Oil
  • 1 Large Onion Peeled and Sliced
  • 1 Head Garlic Peeled and Chopped Fine
  • 2 Pkgs. Baby Bella Mushrooms Sliced
  • 1 Small Can Chicken Broth
  • 1 Box Frozen Tiny Peas
  • 1 Box Orzo Pasta
  • Grated Cheese
  • Salt And Pepper

Step 1

In a deep sided heated skillet add olive oil [about an 1/8 inch]. Put sliced onion into hot oil cover to sweat onions on med heat. When onions are limp remove cover and sauté until caramelized. Move onions to side of pan add chopped garlic and sauté for about 1 minute on low heat [do not let garlic brown]. Remove onion and garlic from pan set aside. Add sliced mushrooms to pan, sprinkle some salt and cover. Mushrooms will create liquid. Drain liquid into bowl set aside. Sautee mushrooms until golden brown. If more olive oil is needed, you can add but don't over do. In a separate pot boil chicken broth, add peas cook 1/2 recommended time shut heat let stand. Cook pasta in salted water 1/2 recommended time. Drain pasta put into fry pan with mushrooms, onions, garlic, chicken broth with peas and mushroom liquid. Mix well, simmer until all liquid is absorbed. Sprinkle grated cheese, salt and pepper to taste.
