Another Easy and Delicious Pot Roast

We love pot roast and have it pretty regularly. I’m always on the lookout for new recipes. I found this in my cookbook stash. Yummy! As you can see, I added carrots and onions to the pot.

Ingredients

  • 1 (3-4 lbs.) boneless chuck roast
  • 1 (12 ounce) can or bottle beer
  • 2 tbsps Italian Dressing mix or
  • 1 packet Good Seasons Italian Dressing

Preparation

Step 1

Brown roast on all sides in a little oil in an ovenproof Dutch oven. Add beer and dressing mix. Bake, covered, at 300º for 3 hours or until tender. Makes 6 servings

Homemade Italian Dressing Mix:

1 tbsp garlic salt
1 tbsp onion powder
1 tbsp white sugar
2 tbsps dried oregano
1 tsp ground black pepper
1/4 tsp dried thyme
1 tsp dried basil
1 tbsp dried parsley
1/4 tsp celery salt
2 tbsps salt


In a small bowl, mix all ingredients together. Store in a container.

If you want to make Italian dressing with it, whisk together 1/4 cup white vinegar, 2/3 cup canola oil, 2 tbsps water and 2 tbsps dry mix.
