Ingredients

  • Dressing:
  • 1 T chopped fresh parsley
  • 1 clove, garlic, minced
  • 1 T dried oregano
  • 1/2 t salt
  • 1/2 t pepper
  • 1/4 c white vinegar
  • Salad:
  • 8 oz mini rotini
  • 1 med cucumber, shopped
  • 4 oz feta cheese, crumbled
  • 1/2 c chopped black olives
  • 1/2 c chopped green olives
  • 2 large tomatoes, chopped
  • 1/4 c OO

Preparation

Step 1

Dressing:
Combine parsley, garlic, oregano, S & P & white vinegar in jar with lid; shake until mixed
Salad:
Cook pasta using pkg direx until al dente
Combine pasta, cucumber, feta cheese, olives, tomatoes & OO in large bowl; mix well
Add dressing, tossing to coat
Chill. covered, for 1 - 24 hrs

Variation: Add 2 c chopped cooked chicken, turkey or shrimp & serve as entrée
