Ingredients

  • 2 cups chopped 1 teaspoon salt
  • onions (I use red 4 cups canned Roma
  • onions) tomatoes
  • 2 tablespoons butter 5 cups chicken broth
  • 1 tablespoon packed 12 to 15 fresh basil
  • brown sugar leaves
  • 1 teaspoon ground 1/2 to 3/4 cup half-and
  • ginger half or cream

Preparation

Step 1

In a large saucepan cook the onions in the butter until brown. Add brown sugar,ginger,salt,tomatoes and both. Simmer a few minutes to soften. Remove saucepan from heat.Puree soup in batches in a blender or using a hand held blender.Return to pan. Adjust seasoning if necessary. Stir in half-and-half.
