Summer Salmon Salad

Ingredients

  • Dressing:
  • 1/2 c. mayo
  • 1/4 c. milk
  • 1 Tbsp. chopped onion
  • 1/2 tsp. fresh dill, minced
  • Salad:
  • 2 c. shredded lettuce
  • 2 c. (7 oz.) shell macaroni, cooked and drained
  • 1/2 c. pitted ripe black olives, halved
  • 2 c. chopped tomato
  • 2 c. cucumber slices, halved
  • 1 - 15 oz. can salmon (or poach or roast your own) drained and flaked

Preparation

Step 1

Combine dressing ingredients well and chill.

In 3 qt. bowl, layer lettuce, combined macaroni, olives, tomato, cucumbers and salmon. Top with 3/4 c. dressing. Garnish with dill sprigs, if desired. Serve with extra dressing.
