Lemon Cream Cheese and Berry Pie on Simple Shortbread Crust

Ingredients

  • Lemon Cream Cheese Filling:
  • 1/2 cup softened butter
  • 1/3 cup sugar
  • 1 cup flour
  • 1 pkg. cream cream, softened
  • 1/4 cup sugar
  • 1/4 cup milk
  • 2 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1 cup whipped cream or Cool Whip
  • Topping:
  • 4 cups washed and dried blueberries OR
  • 4 cups washed and dried halved strawberries OR
  • 4 cups washed and dried mixed berries such as strawberries, raspberries, blackberries or blueberries

Preparation

Step 1

Beat butter and sugar with blender on medium speed until smooth. Add flour, continue beating until mixture is crumbly. Push and press mixture firmly up sides and on bottom of 9" pie plate. If using spring form pan, only press crust 1" up sides. Bake at 375F for 12-15 mins. Cool 20 mins.

Filling: Beat cream cheese with sugar in blender until smooth. Blend in milk, lemon juice and zest. Fold in whipped cream.

Heat berries on high 1 min. in microwave to enhance flavour. Cool 5 mins. Spoon over filling.
