Mussels with Chorizo

Ingredients

  • 5 Tbsp olive oil
  • 6 cloves garlic, minced
  • 1 small onion thinly sliced
  • Kosher salt
  • 3/4 tsp smoked sweet paprika
  • 1 cup fresh chopped tomatoes
  • 1-1/2 cups dry white wine
  • 1-1/4 cups chopped chorizo
  • 4 lbs fresh mussels scrubbed, debearded and rinsed
  • 1 baguette cut on the diagonal
  • Fresh ground pepper

Preparation

Step 1

1. In a 6 quart Dutch oven, heat 3 Tbsp oil over medium heat until simmering hot.
2. Add onions and apinch of salt and cook stirring occasionally, until softened but not brown,about 3 minutes.
3. Stir in smoked paprika and cook until fragrant, about 30 seconds.
4. Add the tomatoes, wine, chorizo and bring to a simmer, stirring occasionally.
5. (you may want to fry up the chorizo a bit before adding the tomatoes and wine)
6. Stir in the mussels coating them with the sauce mixture.
7. Cover and cook Stirring 2-3 times until the mussels have opened about 8-10 minutes
8. Brush the baguettes with garlic infused oil and broil in the oven.
GARLIC INFUSED OIL:
Plce 3 Tbsp of oil in a small bowl. Add two cloves of crushed garlic and let stand for 15 minutes.
