Ingredients
- 2 Cups cooked brown rice
- 1/2 cup tomato, chopped
- 1/2 cup cucumber, chopped
- 1/2 cup green pepper, chopped
- 1/4 cup purple onion, chopped
- 1/2 cup pitted Kalamata olives, chopped
- 1/2 cup Feta cheese, crumbled
- Dressing
- 1 tablespoon lemon juice
- 2 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon dried oregano
- salt and pepper
Preparation

Mix vegetables into cooled rice.
Whisk together ingredients for dressing and add to rice and vegetables
