spicy island-style chicken

Ingredients

  • 3 pounds meaty chicken pieces (breast halves,thighs, and drumsticks)
  • 1/2 cup tomato juice
  • 1/3 cup finely chopped onion (t small)
  • 2 tablespoons lime juice
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 2 tablespoons Jamaican jerk seasoning
  • 6 to 8 fruit wood chunks*

Preparation

Step 1

Place chicken in a large resealable plastic bag set in
a deep dish. For marinade, in a smal1 bowl stir together
tomato juice, onion, lime juice, oiI, and garlic. Pour over
chicken in bag; seal bag. Turn to coat chicken. Marinate
in the refrigerator for 1 to 4 hours, turning bag occasionally.

Dratn chlcken pieces, discarding marinade. Sprinkle
jerk seasoning evenly over chicken; rub in with flngers.

In a smoker arrange preheated coals, wood chunks,
and water pan according to the manufacturer's
directions. Pour water into pan. Place chicken on the
gri11 rack over water pan. Cover and smoke for 1 1/2, to
2 hours or until juices run clear (170 F for breasts, 180 F
for thighs and drumsticks). Add additional coals and
water as needed to maintain temperature and moisture.
