Ingredients
- I rotisserie chicken, shredded
- 10oz can mild enchilada sauce
- 8 oz cream cheese, softened
- 2 cups shredded cheddar cheese, divided
- 1 cup shredded Monterey jack cheese, divided
- 8 10" flour tortillas
- 10oz can southwest style pepper jack cheese, regular cheddar is fine too
- 8oz jar picante sauce
Preparation
Step 1
1. Preheat oven to 350*. Lightly grease 13x9 baking dish.
2. In a large bowl combine chicken, enchilada sauce, cream cheese stirring to combine. Add one cup cheddar cheese and 1/2 cup mont jack cheese.
3. Spoon mixture evenly down enter one third of each tortilla and roll. Then place seam side down in prepared baking dish.
4. In a medium bowl combine the remaining cheese, soup, and picante sauce. Spoon mixture evenly over tortillas.
5. Bake 30 mins or until bubbly.
